Resolution Day Confetti Pancakes


So, I tell myself every year on New Year's Day, 'don't be silly and make resolutions you'll just make yourself crazy not keeping--depression, mental illness, eat more chocolate'...well, you get the idea.  When everything seems to be drooping, flabbing or morphing into the 'older' people you used to say you'd never look like, it's hard not to wish for ambition and energy to keep a darned resolution.  Anyway, since it's the first day of the New Year and the last day of indulgences, I had to try one more fun breakfast before granola, greek yogurt and a banana begins tomorrow.

These pancakes are such fun--especially for kids--you might want to make them instead of birthday cake...well, probably not.  As usual, easy as pancakes with a few twists on Aunt Jemima.  Girl, you got to ditch that dew rag and catch up with Betty Crocker.  By the way, thanks to The Most Wonderful Hubby in the World for my Italian Electric Griddle that's been hiding in various parts of this old house for four years...finally I plugged it in and mi piace moltissimo!

Here we go.  Be prepared for upcoming posts of vegetables, tofu, grains and fruit...must resolve to fit into my first pair of 'fat' jeans.  Just kidding!  Here's to health, love, good food and great friends!

Resolution Day Confetti Pancakes

1 c Pioneer Baking Mix (or Bisquick or self-rising flour)
1 c yellow cake mix
1/2 c buttermilk
1/2 c milk
2 eggs
1 tsp vanilla

sprinkles
1/2 c mini chocolate chips

Topping: 1/2 powdered sugar
2-3 drops food coloring
2 tsp milk, more or less, to get a drippy glaze

In medium size bowl, mix first 6 ingredients.  Blend well then add sprinkles and chocolate chips (you can omit the chocolate if you are crazy).
Heat to medium high heat your griddle or large skillet.  Add 1 TBSP cooking oil and/or butter.  Pour onto griddle/skillet about 1/4-1/3 c batter.  When edges start to dry and top is bubbly, flip over and cook about 45 seconds to 1 minute until done.  Place on platter and keep warm in low heat oven.

Mix powdered sugar ingredients to make glaze.  Dip teaspoon into glaze and wave over pancakes and edges of plate.  Top with sprinkles and chips.  Serve with heated maple syrup and butter. 

Put on your sweat pants.  No high heels or tiny muffin-top jeans after eating these.  Go buy Slim Fast.  Feed the rest to the big dog in the window (not really).
